Ice cream sandwiches cool, quick, easy
Yes, it’s easy. Not quite brainless, as someone remarked, but a simple enough way to put together a summer dessert that’s cool, looks homemade and tastes great.
To make it even simpler, I’ve suggested some flavors that work well together if you’re looking for something more exotic than vanilla ice cream and chocolate chip cookies.
Sort-of-Homemade Ice Cream Sandwiches
Prepare your favorite homemade cookie recipe (or use prepared cookie dough). Cookies should be at least 3 inches wide when baked.
Top one cookie with a scoop of slightly softened ice cream. Top with another cookie. Repeat for as many sandwiches as needed.
Place in the freezer for 15 to 30 minutes so the ice cream can harden. Serve.
Dream duos:
Peanut butter cookies with chocolate-peanut butter candy ice cream
Chocolate chip cookies with mocha chip ice cream (roll the edges in cocoa nibs for extra coffee flavor, if desired)
Molasses cookies with coffee ice cream
Gingersnaps with lemon sorbet
Hazelnut cookies with chocolate-hazelnut gelato
Chocolate cookies with mint chocolate chip ice cream
Snickerdoodles with honey or dulce de leche ice cream
Shortbread with rum raisin ice cream
Chocolate cookies with green tea ice cream
